Meyer Lemons

Here they are — ready to become Lemon Ice. Recipe, which also appears in yesterday's lemon-obsessed post, is below the fold.

A reader asked how much this makes. It serves about 6 people, dainty-ish servings.

1 cup of lemon juice
1 cup of sugar
1/8 teaspoon of salt
2 1/4 cups of water
(the final ingredient — air — is what turns these small quantities into enough to feed 6. Air, of course, is added when you turn on the ice cream machine.)

Whisk it all together, until things dissolve. Chill this mixture. If you don't have time to chill it, then make it with very cold water. 

Put this in the machine and turn it on. In about twenty minutes, you'll have a lovely lemon slushy thing. If you freeze the stuff, you will have more elegant lemon sorbet. You can make a very nice drink out of this by mixing it with fizzy water. I'm sure you can do something involving alcohol and lemon ice, but I haven't tried that yet.

  1. Yes indeed. Or lemon curd. A few years ago, I made Lemon Marmalade, which was pretty good. And my friend Debby makes Lemon Drops — maybe she'll tell us how to do that.
